Time for Late Summer Avocados!

Time to celebrate – avocados are coming into season!

Time to take advantage of this fact and let your house enjoy the bounty of the harvest.

A few avocado facts:
• The first written record in English of the use of the word ‘avocado’ was by Hans Sloane in a 1696 index of Jamaican plants.
• Brazilians add avocados to ice cream.
• The avocado is also called an Alligator Pear because of its pear-like shape and green skin.
• Orchard trees lower air temperature by evaporating water in their leaves.

How to use avocados (some recipes and fun suggestions).

Everyone makes fresh guacamole with nice fresh, ripe Haas Avocados; so we won’t bore you with fifteen recipes about how to make guacamole. We will just suggest that you use ripe avocados, fresh lime juice, fresh pico de gallo, salt and crushed red pepper.

Some other great uses for avocados include:

Pickled and used on a Cuban Sandwich

Pickled avocadoes
Ingredients
6 ripe but still firm avocados
1 cup red wine vinegar
1 cup chopped cilantro
1/3 cup sugar
1/4 cup kosher salt
4 cloves of garlic, sliced
3 jalapeño pepper, de-seeded and sliced thinly
Directions
1. In a saucepan over medium heat combine all ingredients EXCEPT for the avocados, dissolve sugar and salt by bringing to a boil for about 2 minutes.
2. Cool mixture to room temperature.
3. When the pickling liquid is cool, peel and pit your avocados. Slice thin.
4. Put the avocado into a shallow dish and pour the pickling liquid over it. Cover tightly with plastic wrap and place in refrigerator overnight.
5. The avocados are ready to eat the next day.

This should make enough pickles for 25-30 sandwiches.

Chopped and used to make Salsa

Avocado Salsa
Ingredients
8 ripe but still firm avocados, pitted and diced small
8 ripe tomatoes, seeded and diced small
2 red onions, diced small
2 fresh jalapeno pepper, seeded and diced fine
2 limes, juiced
1 tablespoon lime zest
1/4 cup cilantro, chopped fine
1 tablespoon salt
1 teaspoon crushed red chili flake
Directions
1. Prepare all ingredients, toss avocado with lime juice.
2. Combine remaining ingredients with avocados and toss lightly.
3. Keep covered and refrigerated until service.

This should make enough salsa for 25 people.

In a house-made dressing for the salad bar

Avocado Dressing
Ingredients
4 whole ripe avocado, peeled and seed removed
3 clove garlic, peeled
2 tablespoon fresh lime juice
1 cup olive oil
1 tablespoon kosher salt
1 tablespoon ground black pepper
1 cup Water
Directions
1. In a food processor combine garlic, juice, oil, salt, pepper and water until smooth.
2. Add avocado and pulse till almost completely smooth
3. Keep covered and refrigerated until service.

This should make 1 quart of dressing
